Russian Osetra caviar (Acipenser Gueldenstaedtii) comes from the sturgeon of the same name, also known as Russian Sturgeon (an ancient species originally native to the Black Sea, the Caspian Sea and the Azov Sea). Its eggs are medium sized (between 2.6 and 2.9 millimeters). Osetra is the number one suggestion for someone who is looking for genuine Russian Osetra caviar. Russian Sturgeon Osetra is the original and only true Russian Osetra, native to the Caspian Sea and is the world’s most renowned and awarded caviar, due to the current lack of any significant Beluga supply.

How to serve and store caviar:
A precious and delicate premium product, Urbani caviar is fresh, not pasteurized. Store between 28F to 38F (-2C to 4C) and never let it see a freezer. To keep caviar perfectly fresh throughout serving, present the tin nestled in a bed of crushed ice. Metal spoons may impart an off flavor, so use only mother-of-pearl, bone or plastic spoons to serve or taste. Carefully cover the entire surface of the remaining portion with plastic film to protect its lusciousness.
