Kaluga Sturgeon (Huso dauricus x Acipenser schrenkii), sometimes referred to as “River Beluga,” is the largest fresh water fish in the world. These are farm-raised in the Qiandaohu Lake, in an environment close to their natural habitat, in fresh drinking water, free of pollutants. Kaluga caviar makes a great substitute for the lack of Beluga. This caviar’s distinctive savory taste, with hints of fruit and nut, will add a note of exclusivity and sophistication to any table.

How to serve and store caviar:
A precious and delicate premium product, Urbani caviar is fresh, not pasteurized. Store between 28F to 38F (-2C to 4C) and never let it see a freezer. To keep caviar perfectly fresh throughout serving, present the tin nestled in a bed of crushed ice. Metal spoons may impart an off flavor, so use only mother-of-pearl, bone or plastic spoons to serve or taste. Carefully cover the entire surface of the remaining portion with plastic film to protect its lusciousness.
